Easter Cake

We had homemade coconut cake made by loving wife for Easter dinner today.  It was made using this recipe, which seems simple enough if you don’t mind doing everything from scratch, but requires these three ingredients that must be prepared about a week in advance.

The result?  It was very good.  The cake itself was just the tiniest-bit dry, but only in comparison to modern store-bought cake mixes that are impossible to screw-up.  By pre-modern cake mix standards it was very moist indeed.  But other than that small thing, it was delicious.

The show it was featured on said it was a once a year recipe back in the olden days and I can see why, but it was certainly a treat for a special day.
